Saha Massaman Lentil Soup

Serves six

Ingredients

  • 4 cups (1 L) Water, chicken stock or vegetable stock
  • 1 cup (250 ml) brown lentils
  • 1 small onion, diced
  • 2 cloves of garlic, finely chopped
  • 1/4 cup (60 ml) Saha™ Massaman Curry Base
  • Juice of 1/2 lime
  • 1 tbsp (15 ml) vegetable oil
  • 1 tsp (5 ml) salt
  • 1/4 cup (60 ml) yogurt (optional)
  • 1 tbsp (15 ml) cilantro, finely chopped

Method

In a medium dutch oven, heat the vegetable oil over medium heat. Add the diced onion and garlic and cook for 2 to 3 minutes or until onions become translucent. Add the lentils and water or stock and set the heat to high. Bring the mixture to a boil, reduce heat to low and let simmer for 15 to 20 minutes or until the lentils are soft. Add the Massaman Curry Base, lime juice and salt. Transfer the mixture to a blender or food processor in small batches and purée until smooth. Combine the yogurt and cilantro, mix well and reserve. Ladle the soup into bowls, garnish with the yoghurt mixture and serve.
