Green Seasoned Carnitas Tacos

SERVES: 6-8

Ingredients:

 

  • 2-2 1/2 lbs (1-1.2 kg) pork shoulder
  • 1 cups (250 ml) Saha Green Seasoning Marinade™
  • 1 small red onion
  • 3/4 cup (180 ml) apple cider vinegar
  • 1/4 cup (60 ml) water
  • 1 tsp (5 ml) salt
  • 2 tbsp (30 ml) white sugar
  • 2 medium avocados, thinly sliced
  • 1 cup (250 ml) Cojita cheese, shredded (Cheddar, jack cheese etc. are fine)
  • 1 small bunch cilantro, coarsely chopped
  • limes for wedges
  • salt and pepper to taste

Directions:

    1. Season and pork shoulder with salt and pepper on both sides. Heat a large cast iron skillet over medium high heat or turn your Instapot to saute and sear the pork on both sides for four to five minutes, or until well browned.
    2. Transfer the pork and the Saha Green Seasoning Marinade™ to your Instapot and set on high for 1 hour.
    3. While the pork is cooking, slice a small red onion into thin, even slices. Then, combine the water, vinegar, sugar and salt in a small pot over high heat and bring to a boil.
    4. Put the sliced red onions in a small container with a tight fitting lid ,(Your empty Saha Green Seasoning Marinade jar will work!) and then pour the vinegar mixture over the onions, ensuring that they are covered. Fit the lid tightly over the jar and set aside.
    5. When the pork is cooked and tender, transfer it and the liquid from the Instapot to a cast iron skillet and shred it with forks.
    6. Turn the heat to high and bring the mixture to a boil. Reduce the heat to simmer and continue to cook for 45-60 minutes or until the liquid has mostly evaporated and the meat is browned.
    7. By this time, your onions should be pickled! remove some from the jar and set on paper towel to dry the excess liquid. 
    8. Serve the carnitas in tortillas with the cheese, sliced avocado, pickled onions, cilantro and lime.
