Saha Kuku Sabzi

Saha Kuku Sabzi

PRODUCT USED: Saha Green Seasoning Marinade™

PREP TIME: 10-15 minutes COOK TIME: 20-25 minutes

SERVES: 4-6

Ingredients:

 

  • 3 tbsp (75 ml) extra virgin olive oil, divided
  • 1/2 cups (125 ml) Saha Green Seasoning Marinade™
  • 2 cups (500 ml) baby spinach, lightly packed
  • 1 cup (250 ml) fresh dill, chopped and lightly packed
  • 1 1/2 tsp (76 ml) baking powder
  • 1 tsp (5 ml) salt
  • 6 large eggs
  • 1/2 cup walnuts, toasted and chopped
  • 1/3 cup dried cranberries, chopped  

Directions:

    1. Preheat the oven to 375F. In a food processor, combine the spinach, dill, Saha Green Seasoning Marinade™, and one tbsp of the olive oil. Process until fine but not a smooth paste. Leave some texture. Transfer to a small bowl and set aside. 
    2. In a large stainless steel bowl, whisk together the six eggs with the salt and baking powder until well blended. Gently fold in the herb mixture and then the walnuts and cranberries.
    3. In a large non-stick skillet over low heat, gently heat the remaining two (2) tbsps olive oil. when heated, add the egg and herb mixture to the pan and transfer to the middle rack your oven.
    4. Bake for 20-25 minutes , or until the centre of the egg mixture is firm  
    5. Iremove the pan from the oven and let stand for 8-10 minutes, or until the kuku has receded slightly from the sides of the pan. 
    6. When slightly cooled, gently run a knife around the edges of the kuku. Cover the pan with a plate or a tray and invert the kuku onto it. Then repeat the process with another plate or tray so that the kuku is right side up again. Serve with seasoned yoghurt and a salad for a fresh and delicious meal.
