Thai Yellow Curry Fried Rice

PRODUCT USED: Saha Thai Yellow Curry Base™
PREP TIME: 15-20 minutes COOK TIME: 8-10 minutes
SERVES: 4-6
Ingredients:

- 3 cups (750 ml) left over jasmine rice
- 3 large eggs
- 2 tbsp (30 ml) canola oil (or any oil for frying)
- 1/4 cup (60 ml) Saha Thai Yellow Curry Base™
- 1 /2 small red onion, thinly sliced
- 6 baby bok choy, quartered lengthwise
- two small bell peppers, thinly sliced
- 1/2 cup (120 ml) red cabbage, thinly sliced
- 1/4 cup (60 ml) sliced green onions
- lime wedges for serving
Directions:
- Cook the quartered bok choy in rapidly boiling water for two to three minutes or until slightly softened. Set aside to cool.
- In a large bowl, combine the leftover rice with the eggs and mix well.
- Add the oil to a large frying pan set over medium high heat. Add the sliced vegetables and saute for 1-2 minutes or until slightly softened. Add the Saha Thai Yellow Curry Base™ and mix well.


- Maintain the medium high heat and add the rice and egg mixture to the pan. Spread the mixture evenly over the bottom of the pan and let cook for 2-3 minutes or until the egg begins to firm.

- Flip the egg and rice mixture in the pan and continue to cook for 2-3 minutes or until the egg has set.
- Using a spatula, break up the egg and rice mixture until it begins to resemble loose rice grains.
- Divide the fried rice among bowls, top with sliced green onions and sprinkle with lime juice.
