Vegetarian Korma Chickpea Burgers

Vegetarian Korma Chickpea Burgers

PREP TIME: 10-12 minutes COOK TIME: 12-15 minutes

SERVES: 4-6

Ingredients:

  • 1 19 oz can (540 ml) chickpeas, rinsed and drained
  • 1/3 cup (80 ml) Saha Indian Korma Curry Base™, divided
  • 1 cup (250 ml) panko style bread crumbs
  • 1 large eggs
  • 3/4 cup (180 ml) plus 2 tbsp (30 ml) all purpose flour
  • 2 tbsp (30 ml) canola oil
  • 4 burger buns 
  • 1/4 cup (60 ml) mayonnaise
  • Lettuce, tomato, sliced red onion for garnish

Directions:

    1. Add the chickpeas, egg and 1/4 cup (60 ml) of the Saha Indian Korma Curry Base™ to a food processor and process until blended and smooth.
    2. Transfer to a large bowl and add the breadcrumbs. Blend until well mixed and form into four equal patties approximately two centimetres thick.
    3. In a small bowl, combine the remaining Saha and the mayonnaise and mix until well blended. Set aside.
    4. In a large cast iron pan or skillet, heat the oil over medium high heat. Add the chickpea patties and cook for 3-4 minutes per side, or until browned and slightly crisp. Move to a rack or paper towel lined tray to drain.
    5. Working in batches, place the burger buns in the skillet cut face down and toast for 1-2 minutes or until golden brown.
    6. Spread the Korma and mayonnaise mixture over the top half of the burger buns, place the chickpea patties on the bottom half and then top with the tomato, lettuce, onion, and serve.
