Aloo Tikki Chaat

PREP TIME: 30-35 minutes COOK TIME: 10-15 minutes
SERVES: 4-8
Ingredients:
- 4 large russet potatoes
- 4 small green chillies finely chopped
- 1 cup (250 ml) cilantro, coarsely chopped - divided
- 1/2 cups (125 ml) Saha Chana Masala Base™
- 1/2 cup (125 ml) bread crumbs, plus extra for dredging
- 1 tsp (5 ml) salt
- 1/4 cup (60 ml) canola oil - for frying
- 1 cup (250 ml) plain yogurt
- 1 small red onion, finely diced
- 1/2 cup (120 ml) tamarind chutney
- Kashmiri chilli powder or cayenne, to taste
Directions:
- In a large dutch oven, boil the potatoes fro 20-25 minutes or until cooked through. Refrigerate to let cool. Once cooled, peel and grate into a large bowl.
- In a large mixing bowl, combine the grated, cooked potato with the bread crumbs, Saha Chana Masala Base, diced chilies, salt and half of the chopped cilantro. Mix until well combined.
- Using about a quarter cup of the potato mixture at a time, form into flat, round patties. Once formed, dredge the patties in the bread crumbs, Set aside.
- In a large frying pan (cast iron is preferable), Heat the canola oil over medium high heat.
- Working in batches, fry the patties in the oil for 4-5 minutes per side or until browned and crisp. Set aside on towels to remove excess oil.
- Plate the fried patties and then top with the yogurt, chutney, diced onion, cilantro, and then lightly sprinkle with Kashmiri chilli powder.
