Saha Green Curry Glass Noodle Salad with Grilled Shrimp

Serves four


  • 6 oz (180 g) glass noodles
  • 1/4 cup (60 m) Saha™ Green Curry Base
  • 2 tbsp (30 ml) grape seed or vegetable oil
  • 1 tsp (5 ml) sesame oil
  • 1 tsp (5 ml) sesame seeds, toasted
  • 12 Jumbo shrimp, deveined
  • 3 oz (90 g) snap peas, julienned
  • 1/4 cup (60 ml) green onion, thinly sliced
  • 1/4 cup (60 ml) cilantro, finely chopped
  • 2 red Thai chillies, julienned


Preheat grill to medium high. Place the noodles in a large bowl and completely cover them with boiling water and let stand until rehydrated. Drain the noodles and then rinse them in cold water to remove excess starch. Transfer the rinsed noodles to a colander to drain. To make the dressing, combine the green curry base, grape seed oil, sesame oil and sesame seeds in a small bowl and mix well. Cook the shrimp on the preheated grill 3 to 4 minutes per side or until desired doneness. Toss the noodles with the dressing, herbs, snap peas and chillies and transfer to four small bowls or plates. Garnish with four of the grilled shrimp and serve.
