Yields approx. 4 cups (1 L)
- 19 oz (540 g) canned bean medley
- ¼ cup (60 ml) each diced red, yellow and green peppers
- ¼ cup (60 ml) diced red onion
- ¼ cup (60 ml) diced avocado
- ¼ cup (60 ml) chopped parsley, lightly packed
- 3 tbsp (45 ml) Saha Lahmajoun Pizza Base™
- 1 tbsp (15 ml) extra virgin olive oil
- ½ tsp (5 ml) salt
Drain the bean medley and rinse the beans.
Combine all the ingredients in a bowl, reserving the chopped parsley, and toss until well combined.
Cover the bowl with plastic wrap and refrigerate overnight.
Prior to serving, add the chopped parsley and mix well.
